Cocina Centrale, the first regional food market for the group behind Mercato Centrale at the Bonifacio Global City, will be open every Friday and Saturday from 4 p.m. to 3 a.m. starting July 5.

According to Ledesma, many popular food entrepreneurs started from Mercato such as Manang’s Chicken, Mochiko and Merry Moo, which have since opened their own outlets in malls around the metro. He also cited Chuck's Grubberie, Mio, Gelati, Spring by Ha Yuan, Inutak, Zen Taclings and Eat My Garlic Fries. Many of the popular vendors of Mercato-managed markets in Manila are actually from Pampanga, such as Chef Claude Tayag's Bale Dutung, the creators of the popular Pan de Bagnet, a sandwich featuring the sinful Ilocano pork delicacy. Chef Sau del Rosario of Villa Café also hails from Pampanga.

Aside from bringing the Mercato food experience to Pampanga, Cocina Centrale also aims to find great-tasting food by innovative food entrepreneurs in the region. Cocina Centrale features a wide variety of food from Thai, Vietnamese, American, Korean, Persian, Mexican and Filipino cuisines. Sweets and pastries are also available.
